Sweet Potato Fries with Tahini Lemon Dip

Ingredients

Sweet potatoes

  • 2 large sweet potatoes (or four small sweet potatoes)

  • 1 tbsp. olive oil

  • Kosher salt

  • Cinnamon

  • Black pepper

  • 1 tbsp. brown sugar

Tahini lemon dip

  • 1/4 cup tahini

  • Juice of half a lemon

  • 1 tbsp. olive oil

  • Kosher salt

  • Pepper

Directions

  1. Cut the sweet potatoes into wedges about 1 inch thick (these are your fries) and place them in a bowl.

  2. Drizzle the fries with a tablespoon of olive oil and sprinkle them with kosher salt, cinnamon and black pepper (to taste). Add the brown sugar and toss everything together.

  3. Place the fries in an air fryer. Cook them at 400 degrees Fahrenheit for 10 minutes. If you want them a bit more well done, air fry for 15 minutes total. When the fries are done cooking, take them out of the air fryer and set them aside.

  4. Next, make the tahini lemon dip. Add the tahini, lemon juice, olive oil, salt and pepper to a small bowl and mix together. If the mixture is too thick, add a few drops of warm water at a time and stir. Repeat until it reaches your desired consistency.

  5. Plate the fries with the dip and sprinkle them with flakey sea salt before serving.
